Grape-Nuts was invented by C.W. Post way back in 1897, and those little nutritional nuggets still have the same powerful protein punch that fits in with our modern, active lifestyle. You will find that the only ingredients are whole grain wheat flour, malted barley flour, salt, dried yeast. with the added vitamins of reduced iron, niacinamide, zinc oxide, vitamin B6, thiamin monoitrate (B1), and folic acid. Plus you'll find that Grape-Nuts is made with non-GMO ingredients, plus it's soy free.
Cooking with Grape-Nuts added some great flair to our meals. Since I love Brussels Sprouts, I had a craving to combine the two when I saw the recipe at Grape-Nuts. This veggie side dish made with a sweet and crunchy touch perfectly complements any meal, plus it's delicious!
Grape-Nuts Brussels Sprouts
Prep time: 15 min.

Calories per serving: 120
Mustard-Apple Cider Vinaigrette:
- 3 Tablespoons Dijon mustard
- 1 Tablespoon olive oil
- 2 teaspoons apple cider vinegar
- 2 teaspoons minced fresh thyme
Brussels Sprouts Salad:
- 1 lb Brussels sprouts, trimmed and halved
- 1 Tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/2 Fuji apple, cored, halved and thinly sliced (about 1 cup)
- 1/4 cup Post Grape-Nuts cereal
- 1/4 cup dried cranberries
- Preheat oven to 375 degrees F.
- In a small bowl, whisk together mustard, olive oil, vinegar and thyme. Refrigerate until ready to use.
- On a rimmed baking sheet, toss Brussels sprouts with olive oil, salt and pepper. Bake for 20 minutes or until sprouts are tender. Cool slightly.
- In a large bowl, toss roasted Brussels sprouts with prepared vinaigrette, apple slices, cereal and cranberries. Serve immediately.
